Asida (Tunisian porridge)



It’s a basic Tunisian breakfast that is prepared every Sunday at home, It’s so filling and yummy made with semolina and white flour but of course there is always a healthy alternative when it comes to me, I switched the white bleached flour with the whole wheat flour to add even more fibers, and on top of it there is nothing better than wild honey and extra virgin olive oil, these two combined on breakfast will prevent you from colds, allergies, boost your metabolism and provide your body with a bunch of vitamins, Omega 3s and minerals it’s the perfect way to start your day.

The main recipe can be made with a sauce of pumpkin and kadid (sun dried ham) and eaten as a savory dish, OMG I miss that dish, my grandma used to make whenever family is around.

So here is a simple and easy recipe that serves two people


Serves 2

Ingredients:

  • 6 tbs of fine semolina
  • 4 tbs of whole wheat flour
  • 600 ml of water 
  • A pinch of salt 
  • 3 tbs of honey
  • A drizzle of olive oil



Method:

  1. Put all the ingredients in a pan on medium high heat and whisk for about 10 minutes or until it thickens and starts bubbling 
  2. Put the mixture in a bowl and drizzle the olive oil and honey on top 

Eat it warm
