This is a basic tunisian Salad that is made especially
at summer when it’s the season of tomatoes, peppers and cucumbers , we usually
add harissa paste, eggs, canned tuna or sardines and some capers .
Almost every Tunisian eats it with bread and a generous amount of extra virgin olive oil but
when we feel hungry and we find some leftover salad in the fridge it’s 99%
going to end up in a sandwich for the beach or a pre-football-match snack , this
dish is healthy and have all what you need for a lunch ; nutrients, proteins,
carbohydrates and fats . But the problem is that the majority eat it with
baguettes which are made with bleached flour.
This is why I suggest trying to eat it with whole wheat or multi cereal or even gluten free bread, because why not adding those extra nutrients and fibers to your body ?
To all the non Tunisians who are reading this blog I
hope that you can find the true harissa paste because the canned stuff is no
comparison to the one that we make at home ( you can make yours and use it
for your bolognaise too) ;)
Serves 4
Ingredients :
2 cucumbers
3 big tomatoes
1 medium onion
3 peppers
3 tbs of olive oil
Squeeze of one lemon juice
1 tbs of capers
A small can of tuna
4 eggs
4 tsp of harissa paste
¼ tsp Black pepper
Method :
1.
Cut all the
vegetables into cubes and put the olive oil, lemon juice and black pepper, mix
and set aside in the fridge .
2.
Put the eggs
in water, bring them to a boil and once boiling cook for extra 3 minutes (2
minutes if the eggs are small, and you can use hard boiled eggs)
3.
Now put the
salad in the serving dish and top it with capers, harissa paste, tuna and eggs.
