Okra or like we call it in here “Gnawiya”, was a dish that we didn't used to cook much in
our house when I was a child because I didn’t want to eat it or even taste it.
It was one time when I went with my grandma to the house of my mom’s cousin,
She cooked us okra sauce , and I was too shy to say that I didn't like it so I ate in silence, and OMG
I fell in love with it from the first bite.
Since that day it became the dish
that I felt exited for when it was cooked in our house .
Tunisians eat okra even though they don’t know it’s
health benefits
It
lowers cholesterol levels, improves digestive health, improves vision, boosts skin health, prevents certain cancers, strengthens bones, improves cardiovascular health, aids
the immune system, lowesrs blood pressure, and protects heart health.
Because
it’s rich with vitamin A , C, B, E and K + calcuim.
Ingredients:
· 300g of meat
· 200g of okras (gombos)
· 250 g of crushed and peeled tomatoes
· One big onion
· 3 gloves of garlic
· 1 tsp of harissa paste
· 1 tbs of tomato puré
· 2 tbs of olive oïl
· 1 tsp of coriander
· 1tsp of paprika
· Salt and pepper to taste
· 2 green peppers
Method:
1.
Put the pan
on the heat pour the olive oil then put the meat and the tomato puré and cook
it until it changes its color
2.
Add onions,
garlic and spices and sauté for 5 minutes
3.
Pour the
crushed tomatoes with 2 cups of hot water (500ml) ant let cook on a medium high
heat for about 30 minutes (it depends on the meat that you are using )
4.
Meanwhile cut
the heads of the washed okras
5.
Once the 30 mn are done pour the okras in the pan with half a cup of water, cook for 13 minutes and add the green peppers 5 minutes before you turn off the heat
6.
Add salt with a pinch of coriander at
the end .
