Apple cupcakes

It feels like autumn and this feeling made me go and cook these muffins on a sunday evening, it was a rainy sunday so I had to cook something to eat  along with a hot cup of milk.

I honestly didn't expect it to be this good but it is *_* 

I started by shredding 2 small apples to get exactly 1 cup and then mixed everything together, so here are the easy steps in the picture 


serves 10:

Ingredients :

  • 1 cup of shreded apples (2 small)
  • 3 eggs
  • 1 cup of multicereal flour or whole wheat flour
  • 1/2 cup of yogurt (150g)
  • 1/4 cup of canola oil (60ml)
  • 1 tsp of cinnamon
  • 1 tsp of ginger
  • 1 tsp of backing powder 
  • t tsp of vanilla extract 

Instructions:

  1. start by shredding the apples
  2. Preheat oven to 190 degrees C. Grease a 10 cup muffin pan.
  3. In a large bowl, beat together yogurt, date puree and eggs until smooth. 
  4. Mix in vanilla flour, baking powder,cinnamon, ginger powder and salt.
  5. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
  6. Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan.
