Let me tell you how I came up with this recipe, I used
to take spirulina pills whish are very good for the immune system and treats
insomnia and contains a high amount of proteins and micronutrients , but I used
it in here in despite of the health benefits, for the natural blue green color
that I gives to food, so I said why not trying to make a cheese cake in this
hot summer day with something green, and mint is what came to my mind so I made
the base with oats and dates and the filling with fresh ricotta cheese yogurt
and mint.
In all my cheesecake (except the vegan ones) I always
use fresh ricotta cheese and yogurt as a filling, I found that they are the
best alternatives to cream cheese and mascarpone for cheesecakes.
I also used to make cheesecakes with eggs and bake
them in the oven but as summer came I try to avoid the oven because it heats up
the entire kitchen so I bought a vegan gelatin and started using it for
cheesecake and it helped me gain a lot of time and effort. But if you want to
buy gelatin please make sure to buy the vegan one because the ordinary gelatin is
made of pork skin :’(
And if you don’t have gelatin on hand and you want to
make this recipe just add 2 eggs to the original recipe and put it in the oven
for half an hour in 150°C
Ingredients:
For the crust
1+ ½ cup of oats
½ of date puré
A pinch of salt
(add water if needed)
For the filling
- 1 cup of yogurt (220g)
- 1 cup of ricotta cheese
- 1/2of dates pure
- 1 + ½ tsp of gelatin (or 2 eggs for a baked version)
- 3 tbs of hot milk
- 10 mint leaves
- One spirulina pill (optional)
- one drop of mint extract (optional)
Method:
- First start by mixing the ½ of dates with the oats and the pinch of salt , you can water if needed, than place the mixture in the bottom of the mold that is layered with parchment paper, into the fridge.
- Mix the gelatin with hot milk than place it with the rest of the ingredients except for spirulina) in a food processor and pulse
- Divide the mixture in 2 halves and open the pill and put its powder in one of the badges (you can skip this step if you don’t want to color the cheesecake)
- Take out the containers from the fridge and put one layer of the fist mixture and put them in the freezer for 15 minutes, take them out and put the rest of it on top and back to the freezer for 2-3 hours
- You can decorate it with melted chocolate mixed with coconut oil, some cocoa powder, fruits, nuts ...
